In this article the molecular weight of beef zymolyte was determinated by Tricine-SDS-PAGE . The experimental results shows that molecular weight distribution of the samples is between 1060 ~ 24000 and small molecule ( below 5000 ) contents are about 75 % .

用Tricine-SDS-PAGE电泳法对牛肉 酶 解 物的分子量进行了测定，结果表明 产物的分子量分布在 1060~24000 范围，分子量在5000以下的低分子蛋白成分含量约75%。

Because of the water-soluble and unstable properties of the free state enzyme it usually needs to be immobilized on the carrier to improve the diffusion of the zymolyte molecule enhance the thermodynamic stability of enzyme and facilitate the separation and reusage of the enzyme .

游离态酶一般溶于水、不稳定，将酶固定在载体上，有利于 底物分子的扩散，提高酶的热力学稳定性，并方便分离和重复使用。
